Apple Fritters

Ingredients
  

  • 1/2 cup oat flour
  • 1/4 tsp vanilla
  • 1/2 tsp cinnamon
  • 1 egg
  • 2 tbsp peanut butter
  • 2 heaping cups minced apple
  • 1/2 cup walnuts
  • 1/2 tsp potassium bicarbonate

Instructions
 

  • Whisk together flour, vanilla, and cinnamon.
  • Beat egg and peanut butter together and add to dry mixture.
  • Add apple and walnuts and stir until well combined.
  • Scoop up in 1/4 cups and mold into ball-like patties.
  • Cook in coated skillet over medium-low heat until each side is brown and crispy.

Notes

Will be crumbly and fall apart if patty is squished too thin.
