Ingredients
  

  • 2 cups rolled oats
  • 1/2 cup thin sliced almonds
  • 1/4 cup pepitas
  • 1/2 tsp vanilla
  • 1 egg white
  • 1 tbsp maple syrup
  • 3 tbsp almond butter
  • 1/2 cup raisins

Instructions
 

  • Preheat oven to 300°.
  • Add oats, almonds, pepitas, and vanilla to large bowl and stir together.
  • Beat together egg, syrup, and almond butter in separate bowl.
  • Add wet mixture to dry and stir well until oat mixture is evenly coated and clumpy.
  • Spread out mixture in thin layer on parchment-covered baking sheet.
  • Bake for 30 minutes.
  • Transfer to bowl and stir in raisins, breaking up the mixture in the process, leaving chunks as desired.

Notes

Egg white can be omitted if you don’t want clusters.
Any nut or seed butter can be used in place of almond butter.

Ingredients
  

  • 2 large eggs
  • 3 cups rolled oats
  • 1/3 cup honey
  • 3/4 cup peanut butter
  • 1/4 cup pepitas
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped almonds
  • 1/8 cup unsweetened coconut flakes
  • 1/8 cup raisins
  • 1/8 cup mini chocolate chips

Instructions
 

  • Preheat oven to 350°F.
  • Add all ingredients to large mixing bowl and stir until fully combined.
  • Line 9 x 9 baking pan with parchment and add mixture, pressing into the firmest possible even layer.
  • Bake for 15 minutes until center is cooked through and edges start to brown.
  • Remove from oven and transfer in parchment to cooling rack.
  • Cool completely before cutting into bars.

Notes

Use the eggs, oats, and honey as a base and swap in any ingredients you want. Any nut/seed butter should work, and the various mix-ins can be traded out with any other toppings you prefer, or omitted if desired.
