Fruit Crumble Bars

Ingredients
  

  • 2.5 cups almond flour
  • 1 tsp vanilla
  • 1/4 cup avocado oil
  • 1/8 cup maple syrup
  • 3 cups berries or chopped fruit

Instructions
 

  • Preheat oven to 350°F.
  • Stir flour, vanilla, oil, and syrup into crumbly mixture.
  • Set aside 1/2 cup of crumble for topping.
  • Place remaining crumble in parchment-lined 8 x 8 baking pan and use hands to press firmly and evenly into tightly packed crust.
  • Spread fruit evenly on top of crust.
  • Spread topping evenly over the berries.
  • Bake for 45 minutes until topping is golden brown.
  • Cool completely before removing parchment from pan and slicing into bars.

Notes

Recommend serving warmed with fat free whipped cream, though it makes a good cold on-the-go snack too.
